Andalusian Fish Soup. Healthy and quickly done. For more flavour, you can use any fish leftovers like bones, heads or fins.
- After chopping all the ingredients add onions & carrots into hot oil and let it brown
- Add potato, zucchini and stir for some minutes, add garlic, sugar, pepper, paprika and dried herbs
- Stir and add fish broth over high heat
- Add frozen seafood and cook it for 30 minutes in covered pot
- Towards the end add fish filet over low heat and let if cook slowly.
- Ready for serving, you can add cold butter and chopped parsley if you want
- 300g white fish filet
- 500g frozen seafood (clams, calamari, shrimps etc)
- 4 potatoes chopped
- 100g zucchini chopped
- 2 onions finely chopped
- 2 carrots finely chopped
- 2 garlic cloves finely chopped
- 500ml fish broth
- 250ml white wine
- pinch of sugar
- 1 tsp pepper
- 1 tsp paprika
- dried herbs (oregano or others)
- 2 tbs oil
- 1 tbs butter and fresh parsley if desired
Serves 4 persons.
