Carrot Potato Mash – I love the mix with the sweetness of the carrots & the little crunchiness. Lots of butter & parsley & hint of nutmeg finish it to perfection
- Chop carrots & potatoes into pieces
- Boil together in salt water until potatoes are done
- Carrots will be tougher but that’s on purpose
- Drain & mash with masher, its fine if potatoes & carrots remain little chunky
- Season with fresh pepper & nutmeg
- Add hot milk & butter and stir until smooth nice texture is reached
- Finish with freshly chopped parsley
- 350g carrots
- 500g potatoes
- 50ml hot milk
- 50g butter
- salt & pepper
- Bunch of chopped parsley
- Pinch of ground nutmeg
