Big pot of mussles. Healthy, super rich & quickly done (if you have the chance to buy clean mussles, otherwise its bit of cleaning work to do).
- Clean the mussles from outside, remove the “beard”
- Brown the onions and carrots in big pot
- Add celery, tomato, sugar, pepper, paprika, bay leaves and stir it up
- Now its time to add dry white wine and if you want it more flavourful some fish broth
- Add the mussles over high heat into the pot and let it cook for 15 minutes with closed lid
- Half way you can stir it up or shake the pot carefully to mingle mussles in the pot
- Once fully cooked you can add cold butter and parsley for taste
- Ready for serving
- 2kg mussles
- 2 carrots finely chopped
- 2 onions finely chopped
- 300g tomatoes chopped
- 1 celery stick finely chopped
- 1 leak stick finely chopped
- 1 bunch of parsley chopped
- 250ml dry white wine
- 200ml water or fish broth
- pinch of sugar
- 1tsp pepper
- 1tsp paprika
- 2 bayleaves
- 1 tbs butter
- 2 tbs oil
