As breakfast or snack. This Trout Avocado Mousse is great and healthy with lots of protein!

- Mix trout, avocado, onions, anchovies, cranberry jam, capers, lime juice, salt & pepper in a blender
- If texture isn’t smooth enough, add some cottage cheese
- Present on toasted sour dough bread
- Sprinkle some seaweed and add basil for decoration
- 250g smoked trout filets
- 1 ripe avocado
- 2 scallions
- 3 anchovies
- 1 tsp cranberry jam
- 1 tsp capers
- salt & pepper
- Optional 2 tsp cottage cheese
- sour dough bread
- seaweed & basil for decoration
Serves 4 person for breakfast or 8 as snacks
