While been over to Bali I was invited over to Oppy into his villa for some Balinese food – we did some authentic BBQ there, I had a great time with my new friends!

- Mix both fish & shrimp in food processor until smooth. Mix in desicated coconut. Add 3 tablespoons of thick coconut milk.
- Mix onions, garlic, turmeric, ginger, chilli, salt & pepper until smooth.
- Combine both mixtures.
- If the mixture is still too dry, you may add 1 egg white and a bit of olive oil.
- Shape the mixture on sate sticks/lemongrass stalk, flatten slightly.
- Charcoal grill sate until light brown and cooked through.
- 500g fresh tuna or salmon
- 50 grams desiccated coconut
- 6 pieces kaffir lime leaves (thinly sliced)
- 2 tablespoons palm sugar
- 8 shallots
- 2 cloves garlic
- 2 cm galangal or blue ginger
- 2 chillis
- 2cm Kencur
- 1 tsp coriander seeds
- 1cm fresh turmeric
- 25 bamboo or fresh lemongrass skewers
Approx. 25 skewers
