While I was in Luang Prabang at the night market I had this delicious green papaya salad. Took a video for you and have the recipe below. Easy, refreshing and spicy.

Use a big mixing bowl or a mortar, add chilis, garlic, salt, sugar and mix it all together until smooth and mashed up

Add aubergines, tomatoes, green beans and mix all well with the lime juice and fish sauce

At the end mix the peanuts and papaya until all is well covered with the sauce

Try and add more sugar or lime juice if needed

Serve as a starter or side dish to a nice BBQ. I had it with spicy roasted pork belly! So yummy, washed all down with a Beer Lao. Made my day. Enjoy and let me know how you like it.

- 1 green Papaya thinly sliced (500g)
- 10 Thai Aubergine (small egg sized)
- 100g fresh green string beans
- 15 cherry tomatoes, cut in half
- tbs roasted crushed peanuts
- 6 garlic cloves
- 3 chilis (or more if desired)
- 1 tbs salt
- 2 tbs sugar
- 3 tbs fish sauce
- 4 limes (pressed)
