This is a wonderful recipe for calamari lovers! Not chewy and great alternative to the deep fried calamari rings…Pretty easy to make! Buon Appetito!
- Clean the calamari, gently twist the head out as you want to pull out the intestine (they don’t taste very good)
- Keep the heads but cut away the part of the mouth & eyes
- Chop tomatoes, onions, parsley, garlic & mix with salt & pepper
- Transfer half into separate bowl & add the egg, breadcrumbs and the chopped calamari heads – mix thoroughly
- Fill calamari with the mix, don’t put too much otherwise you’d not be able to close them
- Close with a toothpick
- Heat up pan with some olive olive oil and let the second part of the chopped ingredients simmer a bit
- Place calamari in & cover with lid
- Let simmer on stove for 15-20 minutes
- Serve hot with ciabatta
- 4 calamari with heads (fresh or frozen)
- 300g fresh ripe tomatoes
- 1 onion
- 100ml white wine
- Handful chopped parsley
- 3 tbs breadcrumbs
- 2 garlic cloves
- 1 egg
- 1 tbs chopped capers
- Salt & pepper
- Oregano fresh
